Apple evaporator at Avoca (Benton County) circa 1915. Here, apples were peeled, cored, sliced, and spread upon racks positioned over a fire to allow the slices to dry. The slices were treated with sulfur so they wouldn't turn brown during the drying process. The dried apples were then packed into barrels for shipping.
